RECIPE

This quinoa bowl is at its best when the quinoa is still warm and the spinach, and nectarines are cold out of the fridge.  Bring everything together with the amazing dressing and add the pistachios at the end.

INGREDIENTS

DRESSING :
1⁄4 cup Tahini 
1 tablespoon Olive Oil 
2 Garlic cloves 
2 Medium dates, pitted 
1 Lemon or lime, juiced
1⁄2 cup water 
QUINOA BOWL :
1 cup Cooked Quinoa
1/2 cup Cooked Chickpeas
2 handfuls Cooked edamames
1 Nectarine
1 handful Raw Spinach
1/2 Avocado
2 tablespoons Pistachios

RECIPE PREPARATION

Nectarines are the heart and soul of this bowl .

 

To assemble the bowl, start by adding the quinoa. Add the rest of the ingredients and pour over your dressing.

DRESSING:

Place all the ingredients in a blender and blend until smooth. Pour over your Quinoa Bowl and enjoy.

 

CREATIVE COOKING TIP:

Add fresh and seasonal fruits to your salads, they will uplift them. The acidity and sweetness of most fruits like nectarines, apples, and strawberries, go very well together with leafy greens and grains.

  1. I love this recepie. I did not hace al the ingredients so I used instead:
    Red peppers
    Zukini
    Sweet potatoe.
    And I used peanut butter instead of tahini.

    It was delicious!!!!
