Vegan Brownies

A really dense, fudgy vegan brownie topped with amazing red fruit.

Preheat the oven to 180ºC

  1.  Mix the flax seeds with water end let sit for 5 minutes.
  1.  Mix the oat flour with the coconut flour, and the rest of the dry ingredients. Mix well.
  2.  Add the milk, coconut oil and the flax seeds with water.  Mix well until all the ingredients are well combined and smooth.
  3. Mix the wet ingredients with the dry ingredients.
  4. Oil a rectangle tin and pour the dough. Add the fruits on top of the brownie mix.
  5.  Bake for 15 minutes.

Cinnamon Rolls

There is no better way to end a meal than with cinnamon rolls.

 

Start by activating the YEAST:

1) Dissolve sugar and yeast in warm water. Let stand for about 10 minutes, if it doesn’t foam, discard the yeast and start over.

DOUGH:

 

1) On a clean surface add the flour and make a hole, put the egg, dissolved yeast, milk, sugar, and salt in the center. Gradually add all the ingredients.

2) Mix until smooth, add the butter in pieces.

3) Work the dough by hitting it on the table, stretching it, and folding it on itself, at first it will be sticky, but it is not recommended to add more flour.

4) Put it in a bowl and cover it with a damp cloth. Let it rest for about an hour or until doubled in size.

5) Place the dough on a floured surface and knead it lightly. Extend it forming a rectangle of about 40 X 25 cm and 1 cm thick.


FILLING:

1) Spread all the ingredients on the dough. Roll up and cut slices of about 4 cm.

2) Arrange them in the mold leaving a small space between them, cover with a damp cloth, and let them double.

3) Bake at 180 degrees Celsius for about 30 minutes or until cooked and golden. If they start to brown and are not yet cooked through, cover them with aluminum foil.

GLAZE:

1) Mix the icing sugar with the water and the vanilla extract little by little, adding more water if necessary.

2) Glaze the rolls as they come out of the oven while they are hot.

 

Vegan Caramel Sauce with Fleur de Sel

A delicious and super easy take on Salted Caramel . And it’s vegan!

  1. In a small pan, add the coconut cream, brown sugar, vanilla beans and cornstarch. Heat over medium-high heat, stirring constantly while the coconut cream melts. The mixture will get bubbly and almost foamy. Lower the heat to a simmer and stir frequently for about 5 minutes.
  2. Add a pinch of salt.
  3. Remove from heat. The caramel can be used immediately, or let it cool and it willthicken considerably. Each time you go to use it, give it a good stir.

Pan de Pascua French Toast

Turn your Pan de Pascua into a magnificent breakfast: FRENCHTOAST.

1. Slice your Pan de Pascua
2. In a bowl mix the eggs, milk, vanilla and cinnamon.
(Use the normal quantities you use for normal French
toast)
3. Dip the slices of bread into the egg mixture allowing
them to soak on both sides.
4. Transfer each piece to the hot griddle and cook until
golden brown on both sides, about 3 minutes per side.

Pan de Pascua

A Chilean mix between a Fruit Cake and a Panettone.

  1. Whisk the egg whites slightly. Set aside.
  2. In a different bowl, cream the butter and sugar. Add the egg yolks and then the whisked egg whites
  3. Start adding the dry ingredientes (previously mixed, excpet for the spices) and alternate with the milk and pisco.
  4. Add the spices
  5. Add the fruits and nuts (passed in flour just before)
  6. Add to a mould ( a high one is better)
  7. Bake at 180ºC for 1 hour. Check to see the insde, a skewer must come out dry.

Strawberry Bruschetta

Bread, cheese, fruit, honey and as delicious as it is possible to be.

1. Brush the bread with the melted butter and toast it.
2. Take the mascarpone cheese add the honey and mix
it up in a bowl.
3. Then take a smear of the cheese mixture and spread
It on your sliced bread.
4. Chop the strawberries and put them in a bowl.
5. Add a teaspoon of chopped mint and a tablespoon
honey and mix it all up.
6. Take the strawberry mixture and top it on the bread.

Irish Christmas Cake

An Irish tradition from the O‘Sullivan family, crafted with love to bring warmth to this season

1. Cream together butter and brown sugar

2. Add the melted chocolate

3. Add eggs

4. Add the flour and baking powder and ground almonds

5. Add the fruit, almonds, whiskey and apples.

6. Bake for 10 minutes at 140ºC, then turn down to 130ºC until a skewer inserted into the center comes out clean

5 minute, No-oven-needed Granola

Grab a pan and start warming it up.

Place the oats, nuts and omega 3 seed mix and toast them a little bit.

Add the coconut shreds and cacao, and mix well.

Add the honey and continue mixing until everything is incorporated.

Turn the heat off and let cool for 2 minutes.

Enjoy with a bowl of yoghurt and fruit

Chia Pudding

There are two ways you can do this recipe.

1. Add all ingredients to a blender and blend until smooth. Then pour the  mix in individual moulds and place in the fridge.

2. Mix the almond milk with the chia seeds and wait 5 minutes until the seeds get hydrated. Then add the rest of the ingredients and mix by hand. Place in individual moulds in the fridge.

Top them with berries, chocolate chips, coconut chips, granola, nuts or whatever you fancy.

Sticky Toffee Pudding with Apple Caramel

Method for the Apple Caramel:
1. Caramelise the sugar and golden syrup
2. Mix the cream and banana liquer, stop the caramel cooking by adding slowly
3. Nib in the butter and salt until it is all combined
4. Bring 720g of the caramel back to the boil and pour over the sliced bananas in
a gastro.
5. Place in the blast freezer to set

Method for the Apple Cake:

1. Cream the butter and the sugar
2.  Add the eggs one at a time, if the mixture starts to split add a handful of flour
3.  Mix in the milk first then add the puree and the diced apple
4.  Beat in the flour until smooth
5.  150 degrees, 45 minutes ish
6. Pierce the top of the cake when done and pour the remaining caramel over the
top

COCA Sponge Cake

Pre heat oven to 180ºC  30 minutos.

I got this recipe from my grandmother. It is super delicious, light and has a subtle flavour. The texture is different from the traditional sponge cake, is a bit more moist and a lot more fabulous.

Start by mixing in a bowl the oil with the sugar, then add the eggs and lime zest and mix well.

In a different bowl mix the flour with the baking powder. And now the process becomes more interesting: In the first bowl (the oil mix bowl) start by adding a drizzle of the milk, followed by a spoonful of the flour mix, and whisk well. Keep on doing this until all the milk is poured and all the flour is mixed.

Add the mix in an oven mold and bake for 30 minutes.

* Optional: before putting it in the oven you can add walnuts or almonds, finley chopped, on top of the cake.

Vegan brownie with strawberries and cherries

Gooey, fabulous and vegan. The perfect snack for every day

Mix everything in a blender, except for the fruits.

Once you have the mix, add the berries (cut), fold throught the batter and bake for 10 mins at 200ºC.
